Varvello is a family-run milling company with five generations of experience in the industry. Its philosophy is based on a unique fusion of artisanal tradition and industrial innovation, with the goal of offering special, high-quality flours.

The company hasn’t chosen between an ancient mill and a state-of-the-art facility; rather, it has chosen to combine its artisanal spirit with a cutting-edge, market-oriented approach, supported by advanced technologies and one of the most advanced Research & Development departments in Europe.

The concept of “Healthy Eating” is at the heart of Varvello’s mission. The company is committed to nourishing and promoting health through its products. This translates into a rigorous process that begins with the selection of grains and continues with ongoing research into production processes, in collaboration with universities and the most technologically advanced milling industries.

This ongoing research has led to the patent for Farina Intera, a unique, tasty, and healthy flour, obtained through Lavorazione Fedele, a natural and patented process that guarantees healthy and delicious foods, developed in collaboration with the University of Bologna.

The Production Process of Farina Varvello: Commitment and Expertise

The production of Farina Varvello is the result of constant commitment, expertise, and meticulous care. The process begins with the selection of raw materials, choosing only the finest wheat varieties in Italy and around the world. Subsequently, the grain undergoes careful laboratory testing to analyze its physical and biochemical characteristics, assessing its bread-making potential and the organoleptic quality of the finished product. Based on these analyses, the most suitable grain is chosen to become Varvello Flour for a specific use—bread, pizza, or pasta.

The processing steps include:

* intensive cleaning

* blending of homogeneous varieties in silos, with lengthy and differentiated conditioning

* separate milling

This long and painstaking process requires in-depth mastery of the process and an understanding of the microbiological complexity involved in processing. It also requires a perfect balance between artisanal tradition and scientific and technological research, with absolute respect for the naturalness of the ingredients.

Lomellina and Vigevano: home of the milling tradition

Lomellina, a fertile flat area of ​​the Pianura Padana between the Sesia, Po, and Ticino rivers, is the historic and natural setting for Farina Varvello. This region, rich in rural villages and historic towns, maintains a strong identity tied to the land, the preservation of centuries-old traditions, and a drive for innovation. Lomellina is also renowned for its rich gastronomic culture, based on local products such as rice, corn, and other grains.

Vigevano, the capital of Lomellina and designated an “ideal city” by Ludovico il Moro, captivates not only with its historical and cultural heritage but also with its vibrant industrial activity. Its glorious gastronomic tradition is deeply rooted in the products of the surrounding land, which embody the Mediterranean concept of good and healthy eating.

Leonardo’s watermill, located in the Vigevano area, bears witness to the area’s long history of milling. Already in use in the Middle Ages, the mill was one of the first examples of a food processing factory. It’s no coincidence that it was in this area that the watermill was born, its development attributed to Leonardo da Vinci. These mills symbolize a historic tradition and a constant drive for innovation, rooted in the past and projected into the future.
