What is the glycemic index?
When we eat foods rich in carbohydrates or sugars, our blood sugar (the amount of sugar in our blood) rises.
The speed at which this happens depends on many factors, including the presence of fiber, the type of sugar ingested, and the possible presence of fats and proteins.
The glycemic index (GI) measures the rise in blood sugar following the consumption of a food containing 50 g of carbohydrates.
What is postprandial blood sugar?
Blood glucose levels (blood sugar) are not constant, but follow a curvilinear pattern; phases of increase alternate with phases of decrease, depending on meals and their composition.
The lowest values are reached when fasting, for example in the morning before breakfast, while the glycemic peak is highest about an hour to an hour and a half after meals, especially if they are rich in simple sugars.
